Vegan banana and blueberry bread


  • 2 cups wholemeal flour

  • 3 level teaspoons baking powder

  • 1 tsp cinnamon

  • ½ cup desiccated coconut

  • 1 tsp vanilla extract

  • 2 bananas, mashed

  • ½ cup blueberries, fresh or frozen

  • ½ lemon zest

  • chia mix (1 tablespoon chia seeds + 3 tablespoons cold water, left to soak for 15 mins) - if you don’t have chia seeds this bit can be left out

  • ¾ cup oat milk (I used barista)

  • 1/3 cup rapeseed oil

  • ¼ cup maple syrup or honey OR 50g caster sugar


  1. Preheat oven to 180C and grease and line a loaf tin with baking paper

  2. Combine the flour, baking powder, cinnamon and coconut in a large bowl (I use a whisk to stir it, which aerates it and gets rid of any lumps)

  3. In a separate bowl combine the bananas, vanilla extract, chia mix, oat milk, oil and syrup or sugar.

  4. Add the dry ingredients, plus the blueberries and lemon zest to the banana mixture and mix until just combined.

  5. Pour batter into tin and bake in oven for 60 minutes

  6. Once cooked allow to cool on a wire rack before slicing
